b-Side is an exciting new restaurant concept from Chef Brian Mietus, the longtime owner and operator of downtown’s venerable Bacchus Wine Bar & Restaurant. The fabulous new space is now open at 52 W. Chippewa Street, Monday through Friday from 11am to 9pm.
The main focus of the restaurant is rotisserie chicken, a cooking technique that delivers delicious chicken. Guests may order the incredible rotisserie chicken at b-side Market by the quarter, half, or as part of an 8-piece meal. Housemade sauces include a pomegranate ginger barbecue, dill sauce, a “chalet”-inspired sauce, an herbaceous green sauce, and the signature Killer B hot sauce.
Additional offerings allow guests to enjoy lunch or dinner in the dining room or as takeout. Fresh sandwiches include the Crispy Chicken Katsu, featuring chicken with a crisp golden brown panko crust, and shredded cabbage on grilled sourdough. It’s topped with a sweet and savory okonomiyaki-inspired sauce. The Hot Smoke Salmon comes on a toasted “everything” kaiser roll and is smothered with apple fennel slaw and a creamy dill sauce.
